I got this recipe from cooks.com, but I think there are many varieties... in fact, I printed one that is very similar but includes Ranch Dressing somehow. I haven't tried it yet, but if it's any good I'll post it later. Anyway, this is super easy and a good filling meal. Jolynn made a similar recipe to this, which is what prompted me to try it.
4 Chicken Breasts
1 stick butter
1 sleeve Ritz crackers
Crush Ritz cracker on wax paper. Melt butter in a bowl. Roll chicken breasts in butter, then roll in Ritz crackers and place in covered dish. Bake at 350 degrees for approximately 40 minutes.
Easy peezy. I only made two breast and used only like 1/4 a stick of butter and half a sleeve of Ritz crackers... so just make it to the amount you need to cook for. I served it with rice and a veggie and it was pretty yummy... and Matt liked it too!

Hooray for the return of a recipe! I have a few I have been meaning to post but have been too lazy :) I will try to get them up this week!
I've just been too lazy to cook anything. Someday I'll get with it again. This one definitely sounds good. :)
It's good to see ONE of us is actually cooking! I could rate a couple of fast food joints just in case you're looking to eat out.
Ya, we've been major slackers & eating out too much since Matt started his new job! Time to get back to a better routine! :o)
