Sinful Chocolate Zucchini Cake

Since our zucchini is starting to ripen and I need to feel like I've "used" some of our garden before we move, I decided to find a yummy recipe to use it in. My cake didn't turn out looking like the above picture but it really was yummy and you honestly cannot taste any hint of zucchini whatsoever.

Sinful Chocolate Zucchini Cake

2 Cups Flour
2 Cups sugar
3/4 Cup Unsweetened Cocoa powder
2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
4 eggs
1 1/2 Cups Vegetable oil
3 Cups Grated Zucchini
(walnuts, optional)

Preheat oven to 350 degrees, Grease and flour a bundt pan

Combine all dry ingredients and mix. Next add eggs and oil and mix together well. Stir in zucchini by hand until well combined. Pour into prepared bundt pan.

Bake for 50-60 minutes...Check with toothpick at the 50 minute mark.
Cool completely before removing from pan

Chocolate Frosting-
1/2 cup melted butter
1/4 cup cocoa
2Tablespoons milk
1 teaspoon vanilla
2 cups Powdered sugar (maybe a little more until you have a good consistency)

In a small bowl combine butter, cocoa, milk and vanilla. Mix with hand mixer until well-combined. Add powdered sugar and mix until you have a silky creamy consistency. Enjoy!
