Ingredients:
- 1 pkg. fettuccine noodles
- 1 lb sausage or hamburger
- 4 cloves garlic
- 2 shallots or onion
- 1 pkg mushrooms sliced (optional). Could use a green pepper or zucchini instead.
- 2 tbsp olive oil
- 5-8 sliced Roma Tomatoes
- 1 cup Newman's Balsamic Vinaigrette
- fresh grated Parmesan cheese
Instructions:
- Prepare fettuccine according to package while the following is cooking:
- Brown 1 lb. sausage or hamburger (I used hamburger because Tom isn't a fan of sausage). Put in separate bowl for later.
- Mince 4 cloves garlic and chop the shallots or onions (I used a medium onion).
- Saute in the 2 tbsp of olive oil the garlic, onion and the optional mushrooms. Saute until tender and then add the Roma Tomatoes and 1 cup Newman's Balsamic Vinaigrette.
- Add the hamburger back into the mixture and salt and pepper to taste.
- Combine the noodles and hamburger mixture in a big bowl. The sauce will be runny, but it will absorb in the noodles and become delicious! Top it off with lots of Parmesan cheese.
We had this for dinner last night and I loved all the flavors. I didn't add the mushrooms but after eating I thought a chopped green pepper or some of the zucchini would have tasted good sauteed into this. Also, thought that Rotinni noodles would be fun instead of the fettuccine because the spirals make me think more of the "atomic" name. Anyway, looking forward to leftovers for lunch today!
