This is a pretty simple meal, it's a little on the sweeter side, but I think it's quite delicious. It's a recipe from Matt's family.
1 package boneless skinless chicken
1 large bottle Russian salad dressing (Wishbone)
1 package dry onion soup mix (Lipton)
3/4 jar Apricot Preserve (16 oz jar)
Mix ingredients, get the lumps out of the mix from the apricots. Put in pyrex casserole dish and add chicken & cover with foil. Bake at 375 for 1 hour.
Serve with rice and vegetables and a roll. Yummy!
*note you can use either the tenderloins or chicken breasts... this time I got the tenderloins.

This sounds really good...I wonder how it would work in a crockpot?
Okay...it is great in the crockpot!! I cooked it on low for about 6 -7 hours and the result was delicious!
Good job! I was wondering the same thing, I'll have to try it this way next time.
Well great minds must think alike (or shop at the same store). When I went to buy the apricot preserves, they were all sold out, so I opted for the Apricot and Pineapple preserves and it was delish! I chose the chicken tenderloins as well and cooked it in the crockpot. I know I've made this once before but I don't think I liked it as well as I liked it this time. Yum!
