{Idea #4: Quick Italian Chicken & Rice}

This is a great recipe adapted from Pillsbury 30-Minute Meals. You can also make it Mexican Chicken & Rice by substituting salsa for the stewed tomatoes. I like this recipe because it only makes 3 servings (we are terrible at eating leftovers!).

2-3 chicken breasts cut into bit sized strips (I love the pre-cut stir fry chicken at Macey's deli for this)
2 tsp. oil
1 (14.5 oz.) can Italian style stewed tomatoes (I often get diced tomatoes so the chunks aren't as big)
3/4 cup water
1 1/2 cups instant rice

  • Heat oil in a large nonstick skillet over medium-high heat until hot. Add chicken; cook and stir 4-5 minutes or until browned and no longer pink in center.
  • Add tomatoes and water; mix well. Bring to a boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes or until liquid is absorbed.
