We had this for dinner tonight with garlic bread and it was a hit! I adapted the recipe from a Weight Watchers cookbook so it is a really healthy dinner and can be served warm or chilled and served as a pasta salad.
- 1 (9 oz.) package fresh cheese tortellini (I am sure you could also use frozen)
- 1/2-3/4 lb. asparagus cut into 1 inch pieces
- 4 tsp. olive oil
- 2 Tbs. balsamic vinegar
- 4 Tbs. grated Parmesan cheese
- 1 1/2 cups cheery tomatoes, halved
- 1/4 cup finely chopped red onion
- 2 Tbs. capers, rinsed & drained
Cook the pasta according to package direction adding the asparagus for the last three minutes of cooking. Drain and run under cold water.
Meanwhile, combine the oil, vinegar, and half of the cheese in the bottom of a serving bowl. Add the pasta, asparagus, tomatoes, onion, and capers and toss to coat with dressing. Sprinkle with remaining cheese and black pepper to taste.
Enjoy!
